Graham is Irish. Rikke is Danish. Our paths crossed in Mexico in 2001 at the youthful age of 20 and we spent the following 10 years living in and travelling across different parts of the world. Following our footloose days, we decided to make Denmark our base in 2012. The seeds for our brewery were sewn a few years later in May 2015 in the heart of Copenhagen’s historic quarter, Christianshavn, when Graham got his hands on a basic homebrew kit. Soon after brewing the first (barely-drinkable) batch of Ale, the basement at our little 60m2 apartment was converted into an effective pico-brewery where all our early beers were designed, tasted & tested.
We came across the creamery by chance in early 2018 just at the time when our two young children were beginning to push the physical boundaries of space in our little inner-city apartment.
Four-years after starting the first dismantling work, we started packaging our first beers.
/ABOUT BLAS
Having lived in the centre of some of Europe’s most progressive cities, we’ve always found the contrast between urban haute-culture and nature’s refusal to disappear to be fascinating and inspiring. When we moved to the countryside in 2018, we knew it was a move towards where nature rules the roost. BLAS was born out of our belief that rural living doesn’t means totally sacrificing the best parts of urban life and culture.
The word “BLAS” is a Gaelic Irish word with two distinct meanings. Firstly, it means “Taste” or “Flavour” (a core value of our brewery and beers that nicely captures our Irish influence). Secondly, it means “Accent” (in the context of different dialects and pronunciation associated with people from different regions like city-dwellers and country bumpkins).
Through BLAS, we tap into the zeitgeist that values the combination of nature, the peace and space of the countryside, while still being able to enjoy some of the cultural elements that the big city offers.
